This was absolutely delicious! It's Giada's Eggplant Salad with Goat Cheese. A little labor intensive (I grilled the eggplant on a grill pan) but used only a few dishes. I thought it had a lot flavor and was really special.

Thank you for sharing this recipe. I plan on making it a.s.a.p.- tasty vegetarian recipes are always needed in this household. I just recently discovered your blog and have enjoyed reading. We are moving to Madison in June and I can't get enough of any and all things Madison. I am also a nurse (mother/baby)with a little one so it seems we have a few things in common:) Just wanted to de-lurk as they say (I'm just learning all things blog) and introduce myself.
36 year old mother to 6 1/2 year old Talia, 3 yr old Alex, and 7 month old Shayna. I retired from Pediatric Intensive Care Nursing in 2007. My family moved from Philadelphia to Madison, Wisconsin in July 07. I love to craft, quilt, cook and read. Spending time with my kids is ok too! In the last few years I've gotten into green living by trying to eat local, compost, cloth diaper and garden. As a family we are enjoying exploring Madison and transitioning from being East Coast people to Midwesterners. (Updated 09/10)
