What We're Eating: Oven Roasted Sweet Potato Fries
Slice 'em up, toss with olive oil, salt and pepper. Roast in a single layer at 425 for about half an hour. Almost finished with my CSA potatoes from the fall. These were pretty good but I'll say it again: I HATE POTATOES!

36 year old mother to 6 1/2 year old Talia, 3 yr old Alex, and 7 month old Shayna. I retired from Pediatric Intensive Care Nursing in 2007. My family moved from Philadelphia to Madison, Wisconsin in July 07. I love to craft, quilt, cook and read. Spending time with my kids is ok too! In the last few years I've gotten into green living by trying to eat local, compost, cloth diaper and garden.
